For this second fully organic Cuvée Armand & Gaston, we blended one-, two- and three-year-old lambikken coming off five different barrels and not less than sixteen different brews. Almost sixty percent of the lambikken were three years old at least on the moment of bottling, rendering the weighted average age of this blend to more than 24 months. All of the cereals that we used were sourced within our own cereal collective, and 30% of those grains are heirloom land races.
