Lambic – Gueuze

For this Cuvée Miel, we blended a three-year old honey lambik with some young lambik in a 66/34 proportion. While brewing the oldest portion beginning of 2022, we added honey from our own Schaarbeekse cherry orchard bee hives to cooling lambik wort. While blending, we did the same. The weighted average age of this blend was more than 28 months while bottling. Virtually all of the cereals were sourced locally in Pajottenland
